Special Father’s Day dinner at La Makha: author gastronomy for dad

There are dads who enjoy a good match. There are dads who prefer an afternoon in the workshop. And there are dads who, when they sit down at the table, expect something worth the occasion. This article is for that last type.

La Makha Restaurant, on the first floor of Binn Hotel in El Poblado, is the place where Colombian gastronomy stops being folklore and becomes something serious. A dinner here is not just eating well. It is understanding that Colombia has a cuisine that deserves attention.

What makes La Makha different

It is not the price. It is not the décor. It is that the dishes have a point of view.

La Makha works with Colombian ingredients of clear origin: fish from Bahía Solano, prawns from Tumaco, native corn from the Montes de María, salt from La Guajira. These are not names on the menu to sound interesting. They are real suppliers that define the flavor of every dish.

The result is a cuisine that does not try to resemble anything else. It has its own identity, and in an author restaurant that is worth more than any imported technique.

The tasting menu: the best way to celebrate dad

For Father’s Day, the tasting menu is the option that makes the most sense. Seven courses, each with its own pairing, designed for the evening to move without rush and without anyone having to make too many decisions.

With pairing: $420,000 per person Without pairing: $330,000 per person

The seven courses:

  • Corn Crunch — Native corn arepa from the Montes de María with Bahía Solano tuna tartar, oyster mushroom emulsion and La Guajira salt. Pairing: Basil Smash.

Individual dishes: if dad prefers to choose

For those who prefer to build their own dinner, La Makha has a menu where every dish works on its own and also in combination with others.

Starters that open the evening well:

  • Buffalo Stracciatella — With garlic-smoked peas, fennel and orange mousse, confit San Marzano tomatoes and pennyroyal oil. $55,000. The most elegant start on the menu.
  • Corn Crunch — Bahía Solano tuna tartar, oyster mushroom emulsion and La Guajira salt. $45,000. Technical and direct.

Main courses for dad:

  • Grilled Rib Eye — Certified Angus Beef with truffle-infused fries and parmesan. $275,000. For the dad who eats steak without complications.
  • Pork Belly — Three-technique preparation with black garlic and huacatay glaze. $68,000. The most surprising dish on the menu.
  • Octopus — Confit with rooftop herb chimichurri and old almojábana white garlic. $135,000. For the dad who prefers the sea.
  • Rice and Beef — Braised beef neck, soy-cured egg yolk and spring onions. $62,000. Simple in appearance, complex in flavor.

To close:

The three desserts cost $35,000 each. The Chocolate Cake with pork salt is the most daring option. The Coconut and Coffee Flan is the most balanced. The Red Berry Symphony is the freshest.

Signature cocktails: the pairing dad chooses

If the tasting menu already includes pairing, La Makha’s signature cocktails are the perfect aperitif before sitting down. If dinner is à la carte, they are the most elegant way to start the evening.

  • Niebla — Ojo de Tigre mezcal with 8-year espadín agave, pennyroyal syrup and mandarin lemon. $60,000.
  • Revelación Rubí — Bourbon with rye notes, corozo syrup and pineapple extract. $45,000.
  • Esfumado — Aged rum, Frangelico and tamarind syrup with clarified lemon. $38,000.

For those who prefer wine, the menu includes reds, whites, rosés and sparkling wines. The Doña Dominga Carménère at $180,000 per bottle is the most accessible option without sacrificing quality. The Dom Pérignon at $3,305,000 is for when the occasion fully justifies it.
